My mom used to make these when we were in school for every Christmas along with all the other goodies.I knew they were easy to make as i have seen mom make them but i was a little worried about making them. I recently found out many people grind the rawa to a fine powder and then proceed this one has the whole rawa/semolina in them.I am yet to try the other way.

Preparation time : 30 minutes

You need

Rava / Semolina - 1 cup
Sugar - 1 cup
Ghee - 25 gms
Milk - 25 ml
Cardamom powder - a pinch
Cashew nuts - 10 whole nuts
Raisins - 10 nos
Grated fresh coconut (optional) 3 tablespoons

  • Heat  tablespoon of ghee in a pan, fry the nuts and raisins and keep aside. In same pan, dry roast the coconut and keep aside.Be careful to not burn this.
  • Add 2 tablespoon of ghee in same pan, add the rawa/semolina and roast well until you get a nice aroma.Be careful not to burn again.
  • Once the aroma comes, add the remaining ghee and milk and stir until the milk is absorbed by the rawa.Add the sugar now.Mix well.
  • Add the cardomom powder, roasted nuts and raisins and roasted coconut turn off the heat.
  • Wait for this mixture to cool a bit apply ghee on your hands and roll them into balls.
  • Arrange them in an air tight container and allow to cool. They will harden on cooling.

Tips:

  • If you feel the mix is too dry you can add some more milk or ghee and roll them.
  • You need to roll them out while still hot as the hot sugar aids in rolling and holding the ladoos together.
  • Adding too much milk will not let you store them for long especially in summers.
